Why a double helix?
Action research is a spiral process. And in a sense there are two spirals: the content of the action research study, and the process. Both develop in an emergent manner as a study progresses.
So you might say that the double helix indicates the intertwining in action research of process and content, or of action and research.
And I have to admit that I rather liked the other connotations of a double helix.
