Unit description

Examines the concept of sustainability from  environmental , economic, social- cultural and historical perspectives. Students  are introduced to sustainability  issues facing the Tourism and Hospitality  industries and strategic solutions are explored . Topics  covered include environmental externalities, social entrepreneurship , eco-design and  sustainable development as a business priority.

Unit content

Topic 1: Defining sustainability from a historical, environmental, economic and socio-cultural perspective.

Topic 2: Corporate social responsibility, corporate governance and social entrepreneurship.

Topic 3: Externalities of hotel operations  and environmental accounting

Topic 4: Water, energy and waste management

Topic 5: Sustainability and the hospitality customer experience

Topic 6: Environmental management systems  and certification

Learning outcomes

Unit Learning Outcomes express learning achievement in terms of what a student should know, understand and be able to do on completion of a unit. These outcomes are aligned with the graduate attributes. The unit learning outcomes and graduate attributes are also the basis of evaluating prior learning.

On completion of this unit, students should be able to:
1contextualise sustainability and sustainable development concepts and issues
2Evaluate the positive and negative environmental externalities within hospitality and tourism operations for different stakeholders
3analyse sustainability as an integral component of business strategies and operations
4devise solutions to the challenges facing tourism and hospitality industries in managing sustainability

On completion of this unit, students should be able to:
